The coming together of 20 years of culinary experience and expertise with seven generations of culture and craftsmanship. Stone Series, designed by Chef Curtis Stone, handcrafted in Japan by Yaxell. Yaxell has been a major knife supplier in Japan since 1932. Their kitchen knives are sold all around the world and are synonymous for quality, performance and beauty, achieved by combining the best of technology with unsurpassed knowledge of Yaxell’s craftsmen. Their skills have been honed by traditional Japanese sword making techniques, handed down from generation to generation over seven centuries, in the capital of swords and knives, Seki, Japan. BLADE: The blade features San Mai, 3 layer steel, construction. The core, which also forms the cutting edge, is made from Japanese VG10 (cobalt-molybdenum-vanadium) steel and is surrounded by a layer of high quality stainless steel on either side. The blades in the Stone series undergo a special heat treatment which gives it an upper-tier hardness of 61 on the Rockwell scale (HRC61) and guarantees long lasting cutting performance. The surface impresses with beautiful hammered marks and a fascinating Hamon wave line – a symbol of the highest quality knife blade. The hammered finish also acts as a non-stick agent, allowing for food to slide off the blade with ease. HANDLE: The handle is designed to highlight the perfect positioning of the thumb and forefinger. It is made from FDA-approved black Canvas-Micarta, a solid combination of resin and linen. The bolster is constructed using high quality stainless steel and is secured by two durable stainless steel rivets.
